Xinomavro Red Wine
Category: Organic Regional Wine of Kozani.
Varietal composition: 50% Xinomavro - 50% Moschomavro.
Harvest: End of September to early october for Xinomavro, last ten days of September for Moschomavro.
Vinification: Traditional vinification technique for red wines of each variety separately. The first blending between the varieties occurs after the alcoholic and malolactic fermentation has taken place. Then it is left to age in French oak barrels (ermitage and berthomieu) for one year. After it is bottled aging continues in the bottles. It is a wine that can be aged for years.
Flavour Profile: Lively with rich color, intense aroma and high acidity. Time is his ally because the aging process highlights its personality. The exuberance is projected when accompanied rich taste of food.
