Cabernet Red Wine
Category: Organic Regional Wine of Kozani.
Varietal composition: 50% Cabernet Sauvignon - 50% Merlot.
Harvest: End of August to early September for Merlot, first ten days of September for Cabernet Sauvignon.
Vinification: Traditional vinification technique for red wines of each variety separately. The first blending between the varieties occurs after the alcoholic and malolactic fermentation has taken place. Then it is left to age in French oak barrels (ermitage and berthomieu) for one year. After it is bottled aging continues in the bottles. It is a wine that can be aged for years.
Flavour Profile: It is a red wine rich in tannins, concentrated aromas and flavours. Its aromas combine the different shades of the varieties, as well as the barrel.The mouthfeel is strong at the outset, structured and rich then, with a fragrant and long lasting finish.
Matching: It is perfectly combined with intensively flavoured foods.
